  • Amylase is a group of enzymes whose catalytic function is to hydrolyze (breakdown) sugar and starch to give diverse products including dextrins, and progressively smaller polymers composed of glucose units.The a-amylase family comprises a group of enzymes with a variety of different specificities that all act on one type of substrate being glucose residues linked through an alpha-1-1, alpha-1-4, alpha-1-6, glycosidic bonds.
  • Amylases are produced by a variety of living organisms, ranging from bacteria to plants and humans. Bacteria and fungi secrete amylases to the outside of their cells to carry out extra-cellular digestion. When they have broken down the insoluble starch, the soluble end products such as (glucose or maltose) are absorbed into their cells.
  • Amylases can be divided into two categories, endoamylases and exoamylases. Endoamylases catalyze hydrolysis in a random manner in the interior of the starch molecule producing linear and branched oligosaccharides of various chain lengths.
  • Amylases constitute a class of industrial enzymes having approximately 25% of the enzyme market. It is desirable that α- amylases should be active at the high temperatures of gelatinization (100-110°C) and liquefaction (80-90°C) to economize processes, therefore there has been a need for more thermophilic and thermostable α-amylases.
  • There is a very huge demand to improve the stability of the enzymes to meet the requirements set by specific applications, especially with respect to temperature and pH. α-Amylases are generally stable over a wide range of pH from 4 to11 The temperature optimum for the activity of α-amylase is related to the growth of the microorganism. Thermostabilities are affectd by many factors like presence of calcium, substrate and other stabilizers.
  • In Taiwan and other asian countries, the koji process has been used to produce various enzymes by growing molds on cereals or their brans. Although protease and amylase are mainly fungal and eubacterial products, the possibility of using streptomycetes for enzyme production has recently been investigated.
  • The spectrum of amylase application has widened in many other fields, such as clinical, medical, and analytical chemistries, as well as
    their wide spread application in starch sacccharification and in the textile, food, fermentation, paper, brewing and distilling industries.
  • Amylase is also used as an important component in all “bread improvers” for all types of yeast-leavened baked goods. Specific amylases  have the effect of altering the structure of the starch in the bread so that the bread remains soft for a longer time.
  • Companies are expanding their manufacturing bases. Ahmedabadbased Maps India will invest Rs 10 crore for production of new enzymes and
    microorganisms during the current year.Biochemicals is setting up a 100 percent Export Oriented Unit and is planning to invest over Rs 110 crore at Indore SEZ to manufacture cellulase, alkali protease, amylase, catalase, xylanase, acid and neutral protease enzymes.
  • Among the specific types of industrial enzymes, protease and amylase lead the market with current shares of 25% and 20%, respectively. Both markets are expected to grow at approximately the same AAGR of 2.8% through the forecast period. Geographically, the North America market is currently leading with 36% of total market share and will continue to do so through the forecast period.
